Dining at Ma Cuisine, Beaune: A Hidden Gem in Burgundy

Tucked away in the heart of Beaune, Ma Cuisine is a restaurant that lives up to its reputation as a beloved institution for both locals and travelers alike. It came highly recommended by some master sommeliers during my wine studies, and it’s easy to see why. This unassuming spot offers classic French cuisine with a focus on Burgundy’s rich culinary traditions, paired with a thoughtfully curated wine list.

As you enter, the cozy and rustic atmosphere immediately draws you in. The walls are adorned with images of French wines and spirits, from iconic labels to vintage advertisements, setting the perfect stage for the meal to come. It’s a reminder that in Burgundy, wine is as much a part of the culture as the food itself.


œufs en meurette

To start, I indulged in œufs en meurette, a quintessential Burgundian dish of poached eggs bathed in a rich red wine sauce. The sauce, infused with earthy mushrooms and lardons, was beautifully balanced by the velvety texture of the eggs. Paired with a 2011 Volnay Fremiet from Domaine Marquis d’Angerville, the wine’s subtle red fruit and spice notes elevated the dish.. This was the first time I've had red wine with a dish that had eggs as a focus ingredient.


The main course, a seared steak with a Burgundian wine sauce, was equally memorable. Perfectly cooked, the steak was complemented by the deep, savory notes of the sauce, which echoed the flavors of the region’s famous reds. The Volnay continued to shine here, its structure providing just the right amount of acidity and depth to enhance the richness of the dish without overpowering it. A few golden fingerling potatoes on the side added a nice, rustic touch to the meal. Cheese or dessert? I always go for the cheese course, especially when I'm in a region known for its local cheeses.
